CIGALAS CON GELATINA DE LIMA Y ACEITE DE LAVANDA

Ingredientes para 4 pax / Ingredients for 4 people
- 16 cigalas grandes / 16 large crayfishes
- 3 limas / 3 limes
- 2 gr de agar agar / 0,071 oz og agar agar
- 50 cl de aceite de oliva / 2 cups of olive oil
- C/s de sal de carbón / coalt salt as needed
- C/s de flores de lavanda / lavender flowers as needed
Elaboración / Preparation
Exprimir las limas y colar el zumo
Start juicing the limes, and strain the juice
Calentar el zumo en una olla y añadir el agar agar
Heat the juice in a saucepan and add the agar agar
Colar sobre un recipiente no muy hondo y dejar gelificar en la nevera
Strain on a container not very deep and leave gelling in the fridge
Pelar las cigalas
Peel the crayfishes
Limpiar una cabeza y la cuadramos por abajo para que se quede de pie
Clean a head and square by down so that it is on foot
En una sartén poner el aceite de oliva y las flores de lavanda y calentar a 100º

Retirar del fuego y dejar infusionar

En la misma sartén hacer las cigalas y la cabeza
