CODORNICES EN DOS COCCIONES CON SALSA DE CHOCOLATE

Ingredientes para 4 pax / Ingredients for 4 people: 

• 4 codornices grandes / 4 large quail
  
• 2 cebollas / 2 onions

  

  
  
• 500 ml de vino tinto / 17 fl oz of red wine
  
• 500 ml de agua / 17 fl oz of water
  
• 50 gr de chocolate negro / 1,76 oz of black chocolate
  
• 200 gr de girgola / 7 oz of oyster mushroom
  
• C/s de tomillo / thyme as needed
  
• C/s de sal / salt as needed
  
• C/s de sal maldon / maldon salt as needed
  
• C/s de aceite de oliva / olive oil as needed
  

  Elaboración / Preparation: 

  
  

  Limpiar las codornices y separar las pechugas y los muslos de la carcasa

  
  

  Clean and separate quail breasts and thighs of the housing

  
  

  Poner aceite en una cazuela y calentar

  Dorar las carcasas de las codornices

  Añadir el vino tinto y reducir a la mitad

  Añadir el agua y cocer durante 2 horas a fuego lento hasta que se reduzca a una tercera parte

  Una vez marcados los muslos los pasamos a una olla con la salsa y los cocemos 20 minutos
