Para salmonete / To the red mullet:
? 6 salmonetes medianos / 6 medium red mullet

Para el puré de zanahoria / For carrot puree:
? 4 zanahorias / 4 carrots
? C/s de jengibre en polvo / ground ginger as needed
? C/s de aceite de oliva / olive oil as needed
? C/s de agua / water as needed
? C/s de sal / salt as needed
Para la calabaza confitada / For the candied pumpkin:
? ½ calabaza / ½ pumpkin
? C/s de anís verde / green anise as needed
? C/s de aceite de oliva / olive oil as needed
? C/s de sal / salt as needed
Para la perlas de naranja / To the orange pearls:
? 3 naranjas / 3 oranges
? 2 gr de agar agar / 0,07oz of agar agar 
? c/s de aceite de girasol / sunflower oil as needed
Para el aire de azafrán / For the saffron air:
? C/s de agua / water as needed
? C/s de azafrán / saffron as needed
? C/s de lecitina de soja / soy lecithin as needed
Otros ingredientes / Other ingredients:
? Pétalos de caléndula / marigol petals
? Violeta star naranja / orange violet star
? Orejones / dried peaches
Elaboración / Preparation:
Puré de zanahoria / Carrot puree:
Pelar la zanahoria y picar en rodajas
Peel and chop carrots sliced
Poner aceite de oliva en un cazo y rehogar la zanahoria

Añadir sal y el jengibre

Cubrir de agua y hervir

Triturar y pasar por el colador.

Calabaza confitada / Candied pumpkin
Pelar la calabaza y cortar 12 cubos de 2 cm por 2 cm

Poner aceite de oliva en un cazo y calentar a 90º

Perlas de naranja / Orange pearls:
Poner un vaso alto lleno de aceite de girasol en la nevera a enfriar

Cortar las naranjas por la mitad y exprimir.

Añadir el agar agar

Sacar el aceite de la nevera

Llenar una jeringa con el zumo de naranja

El zumo al caer el aceite coge forma esférica y acaba de enfriarse y gelificar.

Poner el agua en un cazo y hervir

En un plato rectangular hacer una línea de puré de zanahoria

Colocar 3 cubos de calabaza confitada encima de la línea

Poner el salmonete sobre la calabaza con la piel hacia arriba

Rayar el orejon y poner un poco encima del salmonete
