Stuffed Chicken Breast in a Spicy Plum Sauce

Ingredients:



4 Chicken Breasts split

1 (8oz) Cream Cheese

1/2 C. Pecans, chopped

1/2 C. Almonds, chopped

2 Tbsp. Cilantro

3 Tbsp. Onion diced

4 eggs, beaten

1 C. flour

Sauce:



1 C. Plums, no seed

2 La Morena®, chipotle peppers

1 Garlic Clove

2 Tbsp. Knorr® Chicken Flavor Bouillon

4 Tbsp. Brown Sugar

1/2 C. Water

Directions:



Season chicken breasts with salt, pepper.

In a bowl mix together cream cheese, pecans, almonds, cilantro, and onions.

Spread each chicken breast with the cream cheese mixture. Carefully roll up the chicken breasts and place a toothpick on each end to secure.

In two separate bowls add flour and beaten eggs. Coat each chicken breast in the flour, then in the eggs.

Heat oil in a pan skillet and cook chicken breasts evenly, you can remove the toothpicks. Set aside.

Pre-heat your oven and bake chicken breasts at 350 degrees for 20 minutes.

Meanwhile, let’s make the spicy plum sauce: Add all sauce ingredients into the blender and blend until smooth. Set aside.

Remove pan from oven, and let stand 5 minutes before slicing and serving with plum sauce. You can serve this dish with mashed potatoes and other Thanksgiving side dishes.
